Linda's Meatballs (Leaner Version)

Ingredients
1 lb. lean ground beef1/4 cup Italian Bread Crumbs1 large egg2 Tbsp. Parmesan cheese1/4 cup chopped fresh flat parsley2 cloves crushed, minced garlicsalt & pepper to taste2 Tbsp. olive oil
Directions
Combine all ingredients except the olive oil in a large bowl and mix by hand. Moisten hands first with water and do not over mix. Using ice cream scoop to keep meatballs even in size, measure out and roll gently into a ball. Place non stick skillet on stove and heat to about medium/medium high. Add olive oil to pan then add meatballs. Turn while cooking to brown evenly on all sides.

Serving Size: Makes about 12 meatballs.

    Your recipe is very similar to mine. I always bake them on the broiler pan in my oven so the grease drips down. I line the broiler pan with foil to make easy cleanup, and usually make 3-4 pounds at a time because it's a lot of work. - 5/13/12
