Brown Jasmine Rice Salad

1 1/3 cups brown jasmine rice, cooked1 cup cucumber, peeled and sliced4 cups salad mix6 baby carrots, grated (what I had on hand), could use 2 carrots, grated1/2 cup Bernstein's light fantastic cheese fantastico salad dressing
Place salad mix and rice in salad bowl. Peel and slice cucumber, grate carrots, add to bowl. Drizzle salad dressing over top. Toss well to combine. Makes 2 servings. Delicious!
