Coconut Rice

Ingredients
1 cup brown basmati rice1 cup light coconut milk1.5 cups waterpinch of salt2 Tbsp unsweetened coconut flakes (optional)
Directions
Combine rice, water, coconut milk, and a big pinch of salt in medium sauce pan.
Cook on medium-high uncovered
Once rice boils, stir once then, cover and turn heat down to low.
Let it simmer until all the water is absorbed.
Fluff with a fork and top with toasted coconut or toasted almonds if desired.
*note, the nutritional info includes the coconut flakes.
