Gumbo, chicken and sausage

Louisian Purchase Gumbo MixOnion1 pound Earl Campbells Hot links (sausage)1 pound Skinless boneless chicken breast1 tblsp Tony Chachere's cajun spice
lightly oil deep stock pot with pam.
put in chopped onion and sliced hot links, simmer.
then add gumbo mix with 7 to 8 cups of water. bring to boil
then add chicken.
bring to boil once again and then let simmer for an hour.
Remove chicken breasts and tear with fork, put torn chicken back in and simmer for another hour.
If you loose too much water keep adding to make a thin gumbo or let it reduce for a thick gumbo....its usually personal prefrence of the cook
