Apple Oatmeal Muffins

1.5 cups whole wheat flour1/3 cup dark brown sugar, packed½ cup rolled oats ( I like the whole ones for texture)2 tsp Natural Cane Sugar (Sugar in The Raw)1 tsp cinnamonSmall pinch salt1/3 c water1/3 c milk1 ripe banana (I had mine in the freezer-thawed) 11tbsp vegetable oil2 oragnic, golden delicious apples (they look reddish, sweet)2 eggs (You could probably sub egg beaters)1 tsp molasses1 tsp vanilla1/4 cup walnuts114 calories2.5 g fat42 mg potassium28.6 g cholesterol~21 mg sodium20 g carbohydrates2 g fiber8 g sugar4 g protein
Preheat oven to 400 degrees. Grease muffin tins.
Combine all dry ingredients. Combine wet ingredients in a separate bowl (until eggs are beaten and banana is broken up). Chop apples into bite sized pieces (remove core). I left the skin on mine and they turned out well. Combine wet ingredients, dry ingredients and apples. Spoon into muffin tins (about 3/4 full- These muffins don't rise a whole lot). Bake for 15-20 minutes. Tops will be slightly browned and inside should be moist but solid. Enjoy! :D
