Turkey Spinach Meatloaf

2 cups chopped onion1.5 cloves garlic, minced1/2 cup dry bread crumbs1/4 cup skim milk1/2 tsp salt1/4 tsp ground pepper1/2 cup egg beaters (2 eggs worth)20 oz ground turkey breast1 (10 oz) package frozen leaf spinach, thawed, drained & squeezed dry1/4 cup marinara sauce
1. Preheat oven to 350 deg F
2. Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add onion, and saute 4 minutes. Add garlic, and saute for 30 seconds.
3. Remove from heat. Add spinach and mix in. Add the bread crumbs, skim milk, salt, pepper, egg, and ground turkey, and mash together.
4. Shape meat mixture into a loaf on a pan coated with cooking spray. Brush marinara over top of loaf. Bake at 350 deg for 45 minutes or until a thermometer registers 160 deg F.
5. Let stand 10 minutes before slicing.
