Lentil and Almond burgers

6 cups water1 cup brown lentils2 tablespoons extra virgin olive oil3/4 cup finely chopped carrot1/3 cup finely chopped onions1/3 cup finely chopped celery (about 1 stalk)1/4 cup sliced almonds1 teaspoon ground thyme1/2 teaspoon salt1/4 teaspoon freshly ground pepper1 large egg yoke1 whole large egg1 tablespoon lemon juice
Cook lentils to recipe on package
Cook onion, carrots and celery in frying pan on medium heat until transparent. Then add almonds and thyme and continue cooking additional 3-4 minutes.
Place mixture into a bowl add one egg yoke and refrigerate for one hour or until cool.
After cooling pulse in food processor 3-4 times.
Add 2 tablespoons flour and 1 whole egg, mix well and cook 3-5 minutes each side in oiled frying pan.
Serving Size: Makes 4 good sized burgers
