Charleston Breakfast Casserole

Ingredients
12 slices of bacon1/4 c butter, melted3 c croutons (or crusty bread, cubed)2 c grated cheddar cheese6 eggs1 c milk1 bell pepper, diced1 T. prepared mustardsalt and pepper to taste
Directions
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Preheat oven to 325 degrees. Melt butter in the microwave. Spray 9x13 in. baking pan with spray. Place croutons in the bottom of the dish, and drizzle with melted butter. Sprinkle w/ grated cheese. Beat eggs in separate bowl. Add milk, peppers, mustard, salt and Pepper to the eggs and mix. Pour over croutons and cheese. Sprinkle with crumbled bacon. Bake in in preheated oven for 40 min. Remove from oven and allow to stand 10 min. before serving.
