Chocolate Mint Crackles

60 g chocolate chips (2 oz)1 c flour (white)1 t baking powder1/4 c cocoa (good quality cocoa makes better cookies)1 c sugar2 large eggs1/4 butter, melted3/4 t peppermint extract1/2 c confectioner's sugar (icing sugar)
Melt chocolate in microwave, set aside.
Melt butter, whisk with sugar, eggs, and flavouring. Stir in melted chocolate. Add flour, baking powder, and cocoa (you can sift dry ingredients together before adding, but I didn't bother).
Cover and refrigerate at least 3 hours. Roll into tablespoon size balls and roll balls in icing sugar. Place 2 inches apart on cookie sheet (you can line sheet with parchment paper, I just used a no-stick pan)
Bake at 325 for about 15 minutes. Cool slightly on pan, then transfer to cooling rack.
