Hearty Black Bean Soup

Ingredients
1 T oil1 large onion, diced1 garlic clove, minced3 cups cooked black beans (or 2 15 ounce cans)1.5 cups water or vegetable broth1 T cumin1 tea salt2 chili peppers, veined, seeded, minced2 tomatoes choppedSour creamFat free cheddar cheese
Directions
Makes 6 servings

Saute onion and garlic in oil
Add two cups beans, mash third cup and add.
Add water, chilis, cumin and salt.
Simmer for 15 -20 minutes
Garnish with fresh tomato, sour cream, cheese or whatever else you like.
