2 15 oz cans Chickpeas (Garbanzo Beans), drained & rinsed2 15 oz cans Black Beans, drained & rinsed4 Tbsp Mint Leaves1/2 cup Parsley1 cup Red Onions, finely diced3 Roma Tomatoes, finely diced1 tsp Garlic, crushed1/4 cup Olive Oil4 Tbsp Lemon juice, fresh squeezed1 tsp Salt (optional to reduce sodium)1/2 tsp Black Pepper, freshly ground
Serving Size: Serves 8
Drain and rinse garbanzo and black beans & place in a large bowl. Finely chop onions, tomatoes, parsley and mint. Add to bowl and stir. Sprinkle the salt and pepper on the mixture and stir. Prepare the dressing in a small bowl: mix the crushed garlic, olive oil and lemon juice together, and pour it over the mixture. Stir and store in the refrigerator.
