Ingredients
beef, top sirloin, sliced thin approx 3oz each yellow mustard1 onion diced finesweet gherkins, diced finebacon, diced fineflour for gravy
Directions
spread each slice of meat with mustard, then lightly salt and pepper. spread equal amounts of pickle,onion and bacon on the meat. roll up and secure with toothpicks. in a saute pan,heat the oil. add meat and brown on one side. turn meat over, reduce heat and add approx .5 cup of water. put lid on pan(leave a vent hole) and cook until liquid evaporates. approx one hour. check meat often. when the liquid has evaporated, allow drippings to brown, turn meat over and add approx one cup water. scrape up drippings and simmer till flavors blend.remove meat to a plate. mix a little flour with some water, stir until blended and add to pan with the drippings. blend and bring to a boil. adjust taste by adding salt or beef boulllion or red wine or basil to increase the flavor of the gravy.
