Protein Pizza Frittata (1/2 recipe)

1 T. olive oil1/4 c. chopped pepperoni1/4 c. chopped onion1/4 c. mushrooms1/4 c. black olives1 c. egg whites (or 8 egg whites)1/8 t. dry mustardgarlic powder, salt and pepper to taste (about a 1/4 t. each)1 c. shredded mozarella cheese1 c. pasta sauce
Preheat oven to 375.
Saute pepperoni and onion in olive oil in oven proof large skillet (so pizza will be thin) Add mushrooms and olives and saute a little longer. Beat egg whites and seasonings in separate bowl. Add cheese. Slowly add egg mixture to pepperoni mixture in skillet. Bake in oven for about 20 minutes. Top with pasta sauce.
