Low-carb Buttermilk Cinnamon Waffles

1/2 Tablespoon granular sugar substitute (sucralose)1/2 Teaspoon ground cinnamon1/4 Tablespoon baking powder1/8 Teaspoon baking soda1 Tablespoon buttermilk3/4 large egg3/4 Tablespoon sugar-free vanilla syrup1/8 Cup cold water1/4 Cup soy flour1 1/2 Tablespoons or 1/3 cup unsalted butter, melted1/4 oil spray for greasing waffle iron
1. Heat waffle iron per manufacturers instructions.
2. Whisk together soya mix, sugar substitute, cinnamon, baking powder and baking soda. Add buttermilk, butter, eggs and syrup and stir until well blended (batter will be stiff).
3. Add cold water 1 tablespoon at a time until batter is easily spoonable and spreadable, about the consistency of a thick pancake batter.
4. Spray waffle iron with oil spray. Place approximately 3 tablespoons of batter in center of a waffle iron.
5. Cook according to manufacturer's instructions until crisp and dark golden brown.
6. Repeat with remaining batter. Serve warm. Enjoy!
