Vegan Quinoa Truffle "Mac" n Cheese

Ingredients
1 cup quinoa, rinsed well2 cups water, boiling1/2 tsp salt or Tony Chachere's1/2 cup Daiya Mozzarella shredded cheese
Directions
Cook the quinoa in the water (add salt) for 20 minutes on low simmer with lid on tightly. When quinoa is cooked and all water absorbed, add the truffle oil first and stir, then add the Daiya and stir well. Adjust saltiness and truffliness as needed.
