Curried Zucchini Soup

Ingredients
-2 lbs. zucchini, thickly sliced-3 shallots, chopped-4 cups chicken broth-1 T. olive oil-curry powder, 1.5 tsp.-salt, 1.5 tsp.
Directions
chop shallots and slice zucchini in thick slices. Heat olive oil in a saute pan and cook over medium heat for 3 minutes, until slightly softened.

Put broth and spices in crockpot. Add zucchini and shallot mixture. Stir together. Cook on low for 5-6 hours. Makes 2 servings. Serve with a salad and whole grain bread
