Black Eyed Pea & Quinoa Salad

Ingredients
1/2 cup Black eyed Peas, cooked & drained1/3 cup Quinoa, cooked1 Small Roma tomato, diced1/3 cup cucumber, peeled & diced2 Tbs onion, diced1 tsp Balsamic vinegarSalt to taste
Directions
Cook peas and quinoa as directed on packages. About 45 min. each.
Measure 1/2 cup peas and drain. Add quinoa and chopped vegetables. Season to taste.

May be served warm or cold. If served warm, recommend warming peas & quinoa then add veggies to warm mixture.

Makes two - 1 cup servings. Recipe may be easily doubled, etc. to serve more.
