Ingredients
big sweet onion2 c diced carrots2 c celery2 c zuchinni1 c peas1 c corn4 c cabbage2 c mushrooms (or spinach)1 15 oz can diced tomatoes1 28 oz can crushed tomatioes w/no salt3 c no fat, low sodium chicken broth2 c lima beanssplash of Worchestire saucesalt and pepper to tastePam cooking spray
Directions
spray pot with Pam
sautee onions
add enough broth to cover
add celery, carrots
sautee
add rest of broth
simmer on medium for 15 minutes
add all other ingredients
cook on medium heat for 2-3 hours or until vegetables are tender
