1 kg zucchini, thickly sliced1 onion, finely chopped2 garlic cloves, finely chopped2 red capsicum, deseeded and chopped5 tbsp hot chicken stock (massel brand is actually vegetable derived)4 tomatoes, chopped1 tbsp olive oilsalt and cayenne pepper to taste
1. Preheat slow cooker.
2. Place the zucchini, onion, garlic and capsicum in the slow cooker and season to taste with salt and cayenne pepper.
3. Add the chicken stock and stir.
4. Add the chopped tomatoes to the top and drizlle with olive oil.
5. Cook on high for 2.5 hours until tender.
Serving Size: serves 6
