White Turkey Chili

Ingredients
roasted turkey breast, chopped onion, lima beans, white northern beans, chicken bouillon cubes, extra virgin olive oil, water, cumin, chili powder, garlic powder, salt, pepper
Directions
Heat EVOO in pot, add 1/4 chopped onion and saute until tender - 5 mins.
Add 1/2 lb turkey breast pieces along with rinsed lima beans and white northern beans (canned).
Season with cumin, chili powder, garlic powder, salt & pepper.
Add 4 chicken bouillon cubes with 4 cups of water.
Bring to a boil, cover & simmer approx 20 minutes or longer.

    Sounds pretty healthy, although it's high in sodium. Maybe change out the boullion for low salt chicken broth or stock? - 1/18/08
