Alton Brown Tuna Croquette

Ingredients
*Tuna, Albacore, in water (Starkist pouch), 7 oz, drained well and shredded by hand*Grey Poupon Dijon Mustard, 2 tsp2 Large eggs, beatenLemon juice, 1 fl oz *Diamond Crystal - Kosher Salt, 0.50 tsp *Black Pepper (Ground), 0.25 tsp*4C Breadcrumbs, Panko Plain, 0.75 cup*Extra Virgin Olive Oil for sauteing
Directions
Combine the tuna, mustard, eggs, lemon juice, salt, pepper and 1/4 cup of the breadcrumbs in a medium mixing bowl and stir to combine. Divide the mixture into 4 patties and set aside. Allow to rest 15 minutes. Place remaining breadcrumbs on a plate and coat each round in the panlo until covered on all sides.

Heat olive oil in a pan and add the croquettes and cook 2-3 minutes on each side or until golden brown. Remove to a cooling rack set over a half sheet pan lines with paper towels. Allow to cool 2-3 minutes before serving.
