Chicken and Lentil Burger

Ingredients
1 teas EVOOCooking spray1 med onion, diced3/4 teas ground cumin (optional)3/4 pound ground chicken breast1 can (15 oz) lentils rinsed, drained or 2 cups cooked lentils3 TB fresh breadcrumbs1 large egg, beaten1/2 teas coarse salt1/2 teas black pepper4 english muffins, split toasted
Directions
heat 1 teaspon oil over medium-high heat, add onion and cook until lightly golden, 7 minutes. Add cuming, cook until frangrant (1 min) Transfer to large bowl, wipe out skillet with paper towel. To bowl add chicken, lentils, breadcrumbs, egg, salt and pepper. Mix with hands into 4 patties.
In skillet heat spray with PAM on medium heat. Add patties, cook until golden brown, 1-10 minutes, flipping once. Serve on Muffins with desired toppings.
