Ingredients
1 pound - Ground beef, extra lean1 tablespoon - Extra light virgin olive oil1 cup - onions3 garlic cloves1 - 6 oz can tomato paste3 cans beans, I use pinto2 cans diced tomatoesBasil to tasteChili powder to tastePepper to taste2 bay leafssalt to taste
Directions
Brown ground beef in olive oil, add onions and garlic. Add tomato paste, mix well. Add beans, canned tomatoes, and two cans of water. Add seasoning. Check flavor periodically to see if it needs seasoning. You can simmer this all day, but at least an hour.

    I didn't have pinto beans so I used one can of black beans and one can of white kidney beans. Also, along with the other spices I added about 2 tsp of cumin powder. It was great! I topped it with a little reduced fat cheddar and it was a very flavorful and satisfying lunch! - 3/30/11
