Egg whitescream of tartarsugarsalt
Beat egg whites and salt until frothy. Beat in cream of tartar, and continue beating until soft peaks start forming. Beat in extract. Beat in sugar one Tablespoon at a time until all sugar is incorporated and stiff peaks form. Batter should be glossy. Drop or pipe spoon sized drops onto parchment paper. Put into 300degree preheated oven for 15 minutes. Do not open door. Turn oven off and leave cookies in oven for up to 2 hours. Remove from oven, cool and remove from parchment. Store in cool dry airtight container for up to two weeks.
