Cabbage Caldo Verde with Turkey Kielbasa

Ingredients
2 cups Nicola Potatoes, cubed into 1/2" pieces2 tbsp cooking oil1/2 lb Turkey Kielbasa, cubed into small pieces1 1/2 cups yellow onions, finely chopped3 cloves garlic, minced3 cups stock, chicken or vegetable (or use water)1/2 - 1 head cabbage, shredded or thinly sliced2 -3 carrots, shreddedsalt & pepper to taste
Directions
In soup pot, cook onions and kielbasa in cooking oil until onions are soft, set aside. Boil potatoes and garlic in salted stock until soft. Mash ptotatoes while in stock and transfer to soup pot mixing with kielbasa and onions. Add cabbage and carrots and boil for 3 minutes. Season to taste.
