Brussel Sprout Fritatta

Ingredients
4 large eggs1.5 cup shredded brussel sprouts0.5 cup chopped red onion2 T olive oil0.33 cup shredded cheddar cheese
Directions
Sautee veggies in olive oil until soft, season with salt and pepper. Scramble eggs in a bowl and pour over the veg in the skillet. Cook until set, top with cheese and place in oven (425 degrees) for about 5-7 minutes until cheese melts and top sets. Cut into portions (1 did 3, but you can do more or less!)

Serving Size: Makes 3 pieces (divide skillet into thirds)
