Apple Cinnamon Macaroons

Ingredients
2 egg whites1 tsp. vanilla 1/2 c sugar1 tsp. cinnamon1/8 tsp. ground ginger1 medium apple1 pat butter
Directions
Wipe bowl and egg beaters with white vinegar to be sure they are free of any grease or oil. Mix sugar, cinnamon and ginger. Set aside. Grease 2 cookie sheets with the butter. Beat egg whites and vanilla until soft peaks form. Gradually add sugar and spice mixture and continue beating until the mixture forms stiff peaks. Fold in grated apple.
Drop by rounded teaspoonfuls onto the greased cookie sheets. Bake at 325 for 20 -25 minutes. Watch them closely. They have to bake longer than traditional macaroons because of the moisture in the apple.
