2 medium zucchini2 medium yellow squash1 medium red bell pepper2 tbsp olive oil2tbsp lemon juice1-2 cloves garlic, chopped salt and pepper to taste
Preheat oven to 350 degrees. Slice zucchini, yellow squash, and red bell pepper into even strips to ensure even cooking. Mix olive oil, lemon juice, garlic, salt and pepper in a medium bowl. Add sliced veggies and toss to coat evenly. Bake on a baking sheet for 15-20 minutes, or until veggies are tender.
