Cheddar Broccoli Potato Soup

Ingredients
1 lg onion2 tbsp unsalted butter2 tbsp flour2 10 oz. can chicken broth + 2 cups water2 lg potatoes2 cups shredded Cheddar cheeseDash black pepper
Directions
Dice onion. Melt butter in large soup pot over medium heat, then cook onion in butter for a few minutes. Add flour and mix. Meanwhile, peel and dice potatoes. Add broth + water to pot, then potatoes. Bring to boil, then reduce to simmer for 20 minutes. Turn off heat, mash potatoes in pot with slotted spoon, then add cheese.

Serving Size: Makes 4 servings.
