Zesty Jalapeno Chicken

Ingredients
Seasonings (salt, black pepper and cayenne pepper) 1 can reduced fat cream of chicken soup1 cup Fresh Salsa (or whatever you can get your hands on)1/4 cup of egg beaters (or egg whites)Fresh or dry cilantro Sliced jalapenos
Directions
Preheat oven to 400 degrees.

Put 4 boneless, skinless chicken breasts in a casserole dish and season to your liking (salt, black pepper and cayenne pepper) on both sides.

In a bowl mix the following:

1 can reduced fat cream of chicken soup

1 cup of Fresh Salsa (or whatever you can get your hands on)

1/4 cup of egg beaters (or egg whites)

Use the mixture to coat both sides of the chicken breasts.

Top with fresh or dry cilantro and sliced jalapenos and put in the oven uncovered for 20 minutes (or until chicken is cooked thoroughly).

Serving Size: Makes about 4 servings
