Mushroom and Barley Risotto

3/4 Cup Pearl Barley3 cups stock (or water)2 cloves garlic1 tsp olive oil85 grams mushrooms100 grams peppers70 grams grated Italian cheeses
Add olive oil to pan, add onion and garlic and soften over medium heat. Add peppers and mushrooms and also soften. Add barley to the pan and stock. Bring to a boil and reduce heat to a simmer.
Simmer for 40 minutes or until liquid is absorbed. You can also add a 1/2 cup of white wine to give it an authentic flavor.
Add the cheese and stir in just before serving.
