Cauli-Rice Pilaf

Ingredients
2c cauli-rice, about 300 grams1 stalk celery, diced1 slice (thin) onion, diced1/2 colored pepper, diced1 clove garlic, minced1T olive oil1/4 c frozen peas1/2 t boullion1/4 c waterSalt and pepper to tastea dash of thyme or poultry seasoninga small bay leaf
Directions
Sauted celery, onion and pepper in olive oil till tender, add garlic and cook one minute more. Add 'rice' and peas and cook for another minute. Add boullion and 1/4 c water. Stir until heated through. Season with salt and pepper (I used seasoned salt). You could top it with a few chopped pecans as well but make sure to adjust the calorie/fat/carb content.

Serving Size: makes 2 1.5 cup servings
