Egg, Spinach, Ham Breakfast Casserole

Ingredients
1 - 1 pound 12 oz bag of frozen, chopped spinach1 - 32oz carton of egg whites3 oz diced ham (95% fat free)1 tsp. canola oil1/8 tsp nutmeg1/2 tsp dry mustard1.5 tsp salt0.5 tsp black pepper1 onion, chopped1 tsp roasted garlic
Directions
Saute chopped onion and garlic in oil with nutmeg, mustard, salt and pepper. This can be frozen and used in recipes later.
In a 9x13 pan, mix all ingredients.
Bake at 350 degrees for 20 to 30 minutes.
