1 T coconut oil1 med onion, chopped2 large cloves garlic, minced1 lb turnips, chopped 1" pieces1/2 lb sweet potato, peeled, chopped 1" pieces2 1/2 cups veg broth1 T soy milk powder mixed w/1 cup H2O or a nut milksaltpepper
Heat oil, add onions and garlic med heat. Saute 3-5 min or until onions begin to turn translucent. Add turnips & sweet potato. Saute 2 min. Pour in broth & soy milk. Bring to boil, reduce heat, simmer 20-25 min or until veggies are tender. Puree. Simmer 5 min. Add salt & pepper.
