Southwest Chicken Salad with Crispy Tortilla Strips

(FF olive oil spray, 1 t cumin, ½ t garlic salt)1 c corn(¼ c chopped red onion)½ lb chicken tenders, cooked and shredded1 head Romaine lettuce mixed w/ ½ bag spinach½ carton grape tomatoes, halved½ c shredded low-moisture mozzarellaLime Cilantro Dressing:1 lime¼ c chopped cilantro(1 c FF Ranch dressing, FF spray, salt freeseasoning)4 whole wheat tortillas, cut into thin strips
Heat a non-stick skillet on med-hi. In a bowl, toss
together cumin, garlic salt, corn and onion. Using FF
spray, sauté corn mixture until browned. Add
shredded chicken and heat.
On each plate, layer lettuce and tomatoes. Top with
chicken/corn mixture. Whisk dressing ingredients and
drizzle over salads. Top w/ cheese. Broil tortilla
strips coated w/ spray and seasoning until browned
and crispy. Serve on top or on the side of the salad.
