Brown Rice Meatloaf

1/4 cup finely chopped onion1/4 cup minced red bell pepper2 cloves garlic, minced1 tblsp olive oil1/2 cup uncooked instant brown rice1/2 tsp salt1/4 tsp white pepper1 egg, beaten1/4 cup ketchup1/4 cup milk1 1/2 lbs lean ground beef1/4 cup parmesan cheese
Preheat oven to 350.
In heavy skillet, cook onnion, bell pepper, and garlic in olive oil until tender. Place in large bowl along with uncooked rice, salt, pepper, egg, ketchup and milk and mix well. Add beef and cheese and mix until combined. Form into loaf on broiler pan.
Bake at 350 for 55 - 65 minutes or until internal temperature registers 160 degrees F. let loaf stand 10 minutes before serving.
