Creamy Sweet Potato Soup

Ingredients
2 Tbsp canola oil1 large sweet onion, sliced2 tsp ground cumin3 sweet potatoes, peeled and cubed1 1/2 quarts chicken broth1 3/4 cup plain yogurt, divided2 Tbsp chopped parsley or cilantro1/4 cup pumpkin seeds, toasted (optional)
Directions
1. Heat oil in soup pot.
2. Add onions and cumin and saute 3-4 minutes.
3. Add potatoes and chicken broth and bring to a boil.
4. Reduce heat and simmer soup 20-25 minutes.
5. Puree soup with 1-1/2 cups yogurt and herbs.
6. Serve each portion with a dollop of remaining yogurt and a sprinkle of pumpkin seeds.
