Ingredients
persimmon pulp, 1 cup Granulated Sugar, 1 cup Egg, fresh, 1 Cinnamon, ground, 1 tsp salt, 0.5 tsp baking powder, 2 tsp Milk, 2%, .5 cup *Canola Oil, 1 tbsp *Flour, white, 1 cup
Directions
Combine dry ingredients. Add wet ingredients. Mix.
Bake at 350 degrees until knife inserted in center comes out clean. (Check first at 30 minutes)

    This was tasty, and I wouldn't have thought to use the persimmons this way if I hadn't seen this recipe. I expected the texture to be like pumpkin pie, but it's more like spoonbread. I still have lots of persimmons left to experiment with! :) - 1/15/13
