Sausage, White Bean & Collard Green Soup with Cornbread Muffins

1 lb lean hot Italian turkey sausage, casings removed1 c chopped onion(1 T minced garlic, 2 chicken bouillon cubes, 6 c water)4 c chopped collard greens2 (15 oz) cans great Northern beans, drained & rinsed2 (8 oz) boxes cornbread mix(FF milk, egg beaters) - calculated with Marie Calendars mix
In a large soup pot, cook sausage, onion & garlic over
med-high, until sausage is browned & crumbly.
Drain well.
Add water, bouillon cubes, collard greens, & beans. Bring to a boil, reduce heat, cover, & simmer for 30 minutes, or until collards are tender.
Prepare cornbread according to package directions
using FF milk & Egg Beaters.
