Ingredients
2 large tomatoes, diced1 large purple onion, diced1 bell pepper (any color), diced1 small can diced green chili peppers1 small jar minced garlic2 tbsp red wine vinegar1 squeeze of fresh limeDiced cilantro (to taste)Salt & pepper (to taste)
Directions
Add all ingredients into large bowl and place in refrigerator with for at least an hour.
This can be served with tortilla chips or a hearty cracker. For added flare you can also include diced avocado, and corn.

    Major complaint is this isn't a recipe for Cowboy Caviar, its a recipe for salsa. The main ingredient in both Cowboy Caviar and Texas Caviar is Black Eyed Peas. It got its name because the the eye on the black eyed pea resebled caviar. - 3/16/13
