TofuVeggies (I use a Stir Fry mix, but any will do)Udon NoodlesPeanut SauceDiced Red Bell Pepper
Saute cubed Tofu and Veggies until thoroughly cooked. Meanwhile, cook noodles according to package instructions. Then combine together and toss with peanut sauce over low heat until it reaches a desired temp.
Serving Size: The hubby and I split this into 2 servings, but they're huge!
