Broccoli, Egg & Cheese Frittata

Ingredients
1 Jimmy Dean Turkey Sausage Link2 Large Eggs1 Cup of Broccoli cut into bite size pieces1 small whole Tomato cut into bite size pieces1 Tbsp Land-O-Lakes Light Butter1 slice of Mozzarella pre-sliced Cheese1/2 Oz. Parmesan Cheese, grated fine
Directions
cut up Broccoli & tomatoes into bite size pieces - set aside
cut up mozzarella cheese slice into small squares - set aside
grate the Parmesan - set aside
cut sausage in half length wise, then cut each half into half length wise again, then cut into small pieces - set aside
whisk the two eggs together in a bowl - set aside

*****I like to season everything individually for lots of layers of flavor, I do not season in the pan I season everything when it is set aside BEFORE it goes into the pan - (Season to taste ex: Salt, Pepper, Oregeno, Basil, Garlic Powder, Mrs. Dash any seasoning combo you like)*****

pre-heat oven safe pan to medium on the stove & pre-heat the oven to 350 degrees

When the stove top pan is heated, add 1/2 Tbsp of the butter and sautee the broccoli for 1 minute, then add they tomatoes and saute for another 1 minute. add the remaining 1/2 Tbsp butter & add the sausage, egg & cheese and scramble together just enough to mix all ingredients, then let it cook until bottom gets a slight crust. Move pan to pre-heated oven and bake until egg is set. Remove pan turn oven to broil, sprinkle the parmesan cheese on the top of the frittata and replace into the oven & broil until cheese is melted. Remove to a plate & enjoy.

(Cooking variation if you do not have an oven safe pan)

When the stove top pan is heated, add 1/2 Tbsp of the butter and sautee the broccoli for 1 minute, then add they tomatoes and saute for another 1 minute. add the remaining 1/2 Tbsp butter & add the sausage, egg & cheese and scramble together just enough to mix all ingredients, then turn burner to med/low more on the low side, sprinkle the frittata with the parmesan cheese & cover the pan with a lid, do not move the mixture around & let is simmer/cook until the egg is set & the cheese is melted. Remove to a plate & enjoy.
