Ham and Sausage breakfast casserole

6 large eggspre-cooked ham (about 3/4 cup)2 pre-cooked sausage links1 cup fresh spinach4 medium fresh mushrooms1/2 large onion, chopped
Scramble eggs in medium bowl, set aside.
Chop up other ingredients, and saute onions, mushrooms, precooked ham and sausage until onions are translucent. Transfer to another bowl, and add in spinach. Grease a glass baking dish (we use an 8x8), pour in eggs, then stir in other ingredients. Bake in a preheated 350 F oven for about 30 mins.
Serving Size: Makes2-9 Servings, depending on appetite size
