Spring Greens with Creole Mustard Vinaigrette

Ingredients
4 tsp. rice vinegar2 tsp. Creole or whole grain mustard2 tsp. honey Dash of saltDash of pepper1 T. olive oil 4 c. salad greens1 c. cherry tomatoes, halved3/4 c. cucumber, thinly sliced1/2 c. carrot, grated
Directions
Combine vinegar, mustard, honey and seasonings in a bowl. Whisk in oil until blended. Toss salad greens, tomatoes, cucumber and carrot in a large bowl with the vinaigrette. Serve immediately.
