Low Fat Lemon Loaf

Ingredients
1 3/4 cups cake flour1/2 cup sugar3/4 teaspoon baking soda1/4 teaspoon baking powderpinch of salt1/4 cup yogurt (regular or soy)1-1/2 Tablespoons oil, plus a little more for the pan1/2 teaspoon vanilla extract1/2 cup water1/2 cup milk (regular or soy)2 Tablespoons lemon juice1 teaspoon lemon zest
Directions
Pre-heat the oven to 350 degree F.

Grease a 9x5 inch pan well with oil.

In a medium bowl, sift together flour, sugar, baking soda, baking powder, and salt.

In a large bowl, blend the yogurt, vanilla, water, soymilk, and lemon juice. Do not overmix. Stir in the lemon zest. Stir in the dry ingredients with a whisk or spatula.

Pour the batter into the greased pan.

Bake for about 35 minutes until a toothpick comes out clean. Remove and allow to cool completely. Loosen sides gently with a knife and remove from pan.
