Persimmon Cookies

2 ripe persimmons, pureed1 tsp baking soda2 C. all-purpose flour1/2 tsp. ground cinnamon1/2 tsp. ground cloves1/2 tsp. ground nutmeg1/2 tsp. salt1 egg1 cup white sugar1/2 C. butter1 cup raisins (optional)1 cup chopped walnuts (optional)
1.Preheat oven to 350* F
2. Dissolve baking powder in persimmon puree and set aside.
3. Sift flour, spices, and salt together and set aside
4. Cream together butter and sugar until fluffy, beat in egg and persimmon puree. Stir in dry ingredients.
5. Add your choice of filler... nuts, raisins, butterscotch or chocolate chips... etc.
6. Drop by teaspoonfuls onto greased cookie sheet. Bake for 15 minutes.
Serving Size: makes 18 cookies
