Terrific Tacos (Deliciously Vegetarian)

Ingredients
12 taco shells or tortillas3 tbsp olive oil1 lg yellow onion chopped1-2 heads broccoli1 med. head cauliflower3 carrots chopped1 (15-ounce) can tomato sauce1 (4-ounce) can diced green chilies2 tsp cumin seed1 tsp oregano1 tsp garlic saltsalt to taste1 c water (optional)
Directions
1. In a large pan, saute' the onions in oil until soft.

2. Mix in the other ingredients; add the water if the mixture becomes too thick or starts to stick. Cook until the vegetables are tender (about 10 minutes).

3. Spoon the filling into warm soft or hard shells. Top with a sprinkling of grated mozarella. Serve.

    Yum! My husband, who eats meat, and I both LOVED this recipe. We used warmed whole-wheat tortillas to make the tacos. This recipe makes A TON of food, so if you have a small family, plan on left overs or cut down the recipe. We will definitely have these again! - 2/11/08
