Blackeyed pea salad

6 C. blackeyed peas...cooked1 Lg red onion...chopped8 oz fetta cheese...crumbled6 Tbs balsamic vinegar2 Tbs dijon mustard3.5 oz sun dried tomatoes
Directions
use directions on bag of blackeyed peas, let cool overnight in fridge. Mix all ingredients and chill before serving.
