1/4 cup shredded carrots, chopped4 TBSP egg whites2 TBSP Pumpkin Puree1/4 cup pineapple1/2 tsp vanilla 2 TBSP milk1/3 cup whole wheat flour1 packet no calories sweetener3/4 tsp cinnamon1/2 tsp pumpkin pie spiceToppings extra
Place carrots with 1 TBSP water in a bowl and microwave until soft. Once carrots are cool add egg, pumpkin, pineapple, milk, vanilla and 2 TBSP water. Mix well.
In a large bowl combine dry ingredients, stir well. Add carrot/egg mixture and mix thoroughly.
Place batter in a griddle and cook just like you would cook any other pancake.
Serving Size: Makes 2 pancakes
