Amanda's Fluffy Bread Based on Alana's Cinnamon Bun Muffins

Bob's Red Mill Coconut Flour, 2 tbspBob's Red Mill Almond Meal/Flour (1/4 cup is 28g), 1 cupFlax Seed Meal (ground flax), 4 tbspCeltic Sea Salt (serv 1/4 tsp = 1.3g), .5 tspBaking Soda, .5 tspSpectrum Organic Coconut Oil, refined, 4 tbspCoconut Nectar, Raw, Coconut Secret, 2 tbspEgg, fresh, 4 large

Preheat oven to 325

Baked in a smaller loaf pan, an Anchor Hocking Bake-N-Store 5 cup, and it made a loaf 2.25" tall. It was pretty brown on the outside but gooey in the middle after 30 minutes, so I wrapped foil around the dish and baked it for maybe 10 minutes more - it was dark, but perfect inside. The flavor is lightly sweet and so delicious... my favorite so far just for nibbling on. Warm and spread with a bit of unrefined coconut oil, it is a real treat!
